Black Bean Chilli

A meat free chilli thats packed with protein and spice 

Ingredients

500g dried black beans 
500g passata 
I tin kidney beans (drained) 
1 large onion 
1 large red pepper 
50g celery 
1 small red chilli (leave in the seeds if you like it hot) 
Juice 1/2 lime 
2 tsp chilli powder 
1 tsp cumin seeds 
1 tsp salt
1 tsp smoked paprika

METHOD
  1. Cover the black beans with approximately 1.5litres water and boil for 45 minutes in a large pan (or per the instructions on the pack) 
  2. Once boiled drain from the pan and set aside 
  3. Using the same large pan heat the olive oil and fry the onions for 5 minutes 
  4. Add the celery, red peppers and chillies and fry for 3-4 minutes 
  5. Add the spices and coat with onion etc 
  6. Next add the passata and return the black beans to the pan 
  7. Allow to simmer for 15 minutes 
  8. Finally add the lime juice and turn off the heat 

Serve with brown rice or sweet potato wedges and avocado
