Thai Style Salmon & Noodles

A quick, fresh and delicious - the perfect mid-week meal 

Serves 2 

Ingredients

2 salmon fillets

2 tbsp Tamari 

1 tbsp of grated ginger

2 garlic cloves, grated 

1/2 red chilli - keep the seeds in if you like a kick

1 tbsp of honey

1 crushed garlic clove

 

150g of buckwheat/soba noodles

1 tbsp of coconut oil 

1 red chilli

2 spring onions

METHOD
  1. To make the marinade, combine the ginger, chilli, garlic, tamari & honey in a bowl. Add the salmon and cover with clingfilm, refrigerate for ideally 1-2 hours 
  2. Chop the chilli and spring onions finely and set aside in a small bowl or container 
  3. Heat the coconut oil in a shallow pan or frying pan until hot and just about sizzling 
  4. Whilst the oil is heating add the soba noodles to a pan of boiling water and cook for 6-7 minutes
  5. Add the salmon to the frying pan skin side down and fry for 4-5minutes, flip the salmon and cook for 3-4 minutes on the other side - set aside once cooked 
  6. Once the noodles are cooked drain the water and replace with cold water 
  7. Add the chilli and spring onion to the salmon pan and cook for 2-3 minutes 
  8. Add the noodles into the frying pan and cover with 1 tbsp tamarin
  9. Serve the noodles from the pan and top with the salmon - finish with a squeeze of lemon juice
