Chicken Satay Stir Fry

FITISM's healthy take on classic chicken satay



Serves 2

2 large chicken breast
2 small bulbs pak choi
4 spring onions
2 handfuls broccoli
½ inch piece ginger (5g)
1 red pepper
1 carrot
1 tsp coconut oil

Peanut Satay Sauce
50g peanut butter
20ml lime juice (approx 1lime)
3 tsp soy sauce (or tamari)


1. Prepare the sauce by combining all ingredients in a small bowl and stirring with a spoon or whisk

2. Chop the chicken into strips and roughly chop the vegetables

3. Melt the coconut oil in the wok and add the chicken, cook for 3-4 minutes, add the vegetables and cook for a further 5 minutes.

4. Add the sauce and coat the ingredients in the wok, cook for a further 2-3 minutes

5. Ensure the chicken is fully cooked and serve
