100g chicken breast
100g puy lentils (cooked weight, tinned or in a pouch)
1 red pepper
1 courgette
1/2 red onion
1 tbsp olive oil
1 tsp mixed herbs
salt, pepper, dried herbs
80g broccoli
Pre-heat the oven to 180*C
Roughly chop the vegetables and add to an oven proof dish
Add the chicken to the dish and pour over the olive oil and mixed herbs
Transfer to the oven and cook for 20 minutes
Remove from the oven and add the lentils
Return to the oven and cook for a further 20 minutes
Meanwhile steam the broccoli
Ensure that the chicken is throughly cooked and serve with the steamed broccoli
